  • 1 ½ tablespoons olive oil
  • 1 medium ripe plantain, peeled and diced
  • 7 medium broccoli florets
  • 1 teaspoon mild curry powder (baby-friendly, not spicy!)

1. Warm the oil: In a small saucepan over medium heat, warm the olive oil gently. Avoid letting it smoke.


2. Sauté the ingredients: Add diced plantain, broccoli florets, and curry powder. Stir for about 30 seconds to activate the spice and lightly coat the vegetables.


3. Simmer: Add 1 cup of water and bring to a gentle boil. Reduce heat and simmer for about 8 minutes, or until the plantain is fork-tender.

Tips for success


Use a ripe plantain


A ripe plantain (yellow with black spots) is sweeter and softer, which enhances the flavor of the purée and makes it easier to blend into a smooth consistency. Unripe (green) plantains are starchier and can taste bland or chalky, which isn’t ideal for babies.


Don’t skip the sauté step
