Instructions:

1. Prepare the Sweet Potatoes: Peel and dice the two medium sweet potatoes into small chunks for faster cooking. Steam or boil the sweet potato chunks until they are soft and fork-tender (about 10-15 minutes). Once cooked, drain (if boiled) and mash the sweet potatoes into a smooth puree using a fork, potato masher. or blender.

Shapes like macaroni, fusilli, or shells work well for little ones. Reserve ½ cup of the pasta water before draining the cooked pasta.

3. Combine the Ingredients: Place a saute pan on low-medium heat. Add the cooked pasta to the pan. Stir in the mashed sweet potato and the softened cream cheese. Mix well until everything begins to combine.

4. Adjust the Consistency: Pour in ½ cup of the reserved pasta water gradually while stirring. This helps create a creamy sauce and prevents it from being too thick. Mix until the pasta is well-coated and the sauce is smooth.

5. Cook and Serve: Let the mixture heat gently for 3-4 minutes while stirring to ensure everything is warmed through and the sauce is evenly distributed. Remove from the heat and allow it to cool slightly before serving.

Tips for Success

Choose the Right Sweet Potatoes: Opt for orange-fleshed sweet potatoes, which are naturally sweet, creamy, and easy to mash. They create a vibrant and smooth sauce that kids love.

Cook Sweet Potatoes Thoroughly: Make sure the sweet potatoes are completely tender before mashing. Undercooked sweet potatoes can result in a lumpy sauce. Steaming preserves more nutrients, but boiling is equally effective if drained properly.

Reserve Pasta Water: The starchy pasta water is key to achieving a creamy, smooth sauce. Start with ½ cup, and add more gradually if needed to reach the desired consistency.

Softened Cream Cheese is Key: Use cream cheese at room temperature or soften it beforehand. This makes it easier to mix evenly into the sweet potato puree without clumping.

Mix Over Low Heat: Keep the pan on low to medium heat while mixing to prevent the sauce from drying out or sticking to the pan. Stir constantly for a silky, even coating.

Adjust Texture for Age

Babies and Toddlers: Blend or mash the pasta and sauce together for smoother textures for babies or leave the pasta whole but soft, and ensure the sauce isn't too thick for easy swallowing.

Older Kids: Add toppings like grated cheese or finely chopped steamed veggies for variety.

Make it Ahead: The mashed sweet potato can be prepared a day in advance and stored in the fridge. This makes the recipe quicker to assemble when needed.

Reheating Tips: If storing leftovers, add a splash of water or milk while reheating to restore creaminess. Reheat gently on low heat to prevent the sauce from drying out.

Substitutions and Additions

For Sweet Potatoes: Use pumpkin or butternut squash for a similar creamy texture and natural sweetness. Mashed carrots can also work, though the flavour is less sweet and slightly earthy.

For Cream Cheese: Use ricotta cheese for a milder, soft texture. For a dairy-free option, try coconut cream or a plant-based cream cheese.

For Pasta: Swap regular pasta with whole wheat pasta, gluten-free pasta, or legume-based pasta (like lentil or chickpea pasta) for added nutrition.

For Pasta Water: If you forgot to reserve pasta water, use milk (dairy or plant-based) or plain water to adjust the consistency.

Vegetables for Extra Nutrition: Add finely chopped steamed veggies like spinach, peas, zucchini, or broccoli to the sauce. These blend well with the sweet potato base. Stir in pureed or mashed cauliflower for a creamy texture boost.

Protein Options: Mix in shredded or finely diced chicken, turkey, or tofu for added protein. For older toddlers and kids, sprinkle with grated hard-boiled egg yolk or mix in scrambled egg for a softer texture.

Flavour Boosters for Older Kids: Add a pinch of cinnamon, nutmeg, or a touch of paprika to enhance the flavour. Stir in a bit of grated parmesan or cheddar cheese for extra creaminess and flavour.

Healthy Fats: Drizzle in a teaspoon of olive oil or stir in a bit of unsalted butter for a richer sauce, especially for toddlers needing higher calories. Add avocado puree to the sweet potato mixture for creaminess and healthy fats.

Herbs: Add finely chopped fresh herbs like basil, parsley, or dill for a subtle flavour boost. Sprinkle a tiny bit of garlic powder for a savoury touch.

Sweet Options for Babies: Blend in a teaspoon of apple puree or pear puree for added natural sweetness, complementing the sweet potato.

How to Store

Refrigeration: Allow the pasta to cool completely at room temperature before transferring it to storage containers. This prevents condensation, which can lead to soggy pasta. Place the pasta in an airtight container to keep it fresh and prevent it from absorbing odours from the fridge.

Store in the refrigerator for up to 3 days. Beyond this, the pasta may lose its texture and flavour.

Freezing: Divide the pasta into baby- or kid-sized portions before freezing. Use freezer-safe containers or resealable bags. To preserve freshness, freeze immediately after cooling. Mark the container with the date to ensure you use it within 3 months for best quality.

Thawing and Reheating: Thaw overnight in the refrigerator or reheat directly from frozen. Add a splash of water, milk, or broth when reheating to restore creaminess. Heat gently on the stovetop or in the microwave.
