Instructions

  1. Mash the ripe banana in a bowl until smooth.
  2. Add the oat flour, egg, milk, and cinnamon, mixing until you have a batter-like consistency.
  3. Heat a non-stick skillet over low-medium heat and lightly grease with oil or butter.
  4. Spoon small portions of the batter onto the skillet, forming mini pancakes.
  5. Cook for 2–3 minutes on each side, until golden brown and cooked through.
  6. Let them cool slightly before serving.
